It is found in abundance along coastlines in the English Channel and the North Atlantic. Discovered accidentally in Scotland in the 1980s, it is now known to be a source of alginic acid, which has gel-like properties. This acid is widely used in food preparation—puddings, icings, creams, cheeses, and baked goods—as well as in cosmetics.
