Drinking it was once considered the path to everlasting life, and its name comes from the silvery-white leaf buds which are picked during the first days of spring. White tea undergoes a withering process until dry. This simple procedure preserves all the qualities of the leaf, and explains its high content of anti-free radical polyphenols.
