Among the most well-known plants from the Apiaceae family, along with wild carrot, wild chervil is very widespread and grows in hedgerows and along forest edges. This perennial plant, harvested in France, sometimes twice a year, has lightly fragranced leaves and small white flowers with 5 petals. It is the first plant to invade open areas and chokes out any competition with its imposing size. It is considered a pioneer plant. In traditional Chinese medicine, and in India, Japan and Europe, wild chervil is known and still used for its anti-inflammatory properties.
